Simply Nutritious Berry Tarts

Dietary Preferences: Vegetarian

Ingredients:

Oat cups

  • 2 cups of oats
  • 1 cup of medjool dates
  • 1 tablespoon of coconut sugar
  • Drop of vanilla extract
  • 1/3 cup of unsweetened almond milk

Berry filling

  • 3 cups of frozen berries (I used cherries, blackberries and cranberries)
  • 1 tablespoon of honey

For the top

  • 6 almonds

Directions:

Soak the dates in boiling water for 15 minutes. In a bowl add the oats and coconut sugar.

Empty the dates along with 1/4 cup of the boiling water into a food processor and blend for a couple minutes until you have a caramel like thick sauce.

Combine the date sauce to the oats, add in the vanilla extract and mix altogether.

Using rubber muffin cases I then formed the oat bases inside them.

Ensure the middle is indented so there is enough room for the berry filling. Pop the oat bases into the oven at 180 degrees for 15 minutes.

Now prepare the filling. In a pot add the frozen berries and honey. Let them cook on a medium heat until they begin to boil.

In a food processor add the almonds and grind them until they are very fine. Place baking paper onto a baking tray , toss the almonds on the baking paper and let them toast in the oven for literally 1/2 minutes.

Once the oats bases are ready, take out from the oven and allow to cool for 20 minutes. Once cool remove them from the muffin cases.

Spoon the filling into the oat bases, I did about 2 tablespoons of filling per tart. Once you have them all filled sprinkle some of the toasted almonds on top.

These berries tarts are super delicious heated back up again for a few minutes in the oven and served with Greek yoghurt. Experiment and add different berries as the filling or even try my avocado chocolate mousse inside these oat bases, incredibly yummy!

A dessert that can be enjoyed any time of the year!!!
