Sweet and Sticky Popcorn

Simply Nutritious PopcornPopcorn can be enjoyed as a healthy snack when made at home. One cup of homemade popcorn with nothing added has around 30 calories, not so bad. However when cooking you will add calories with the choice of oil you use and any extra flavours. Try to keep them at a minimum and this can be enjoyed as a healthy treat!

Dietary Preferences: Vegetarian and Vegan

Ingredients:

  • 1/2 cup of popcorn kernels
  • 3 tablespoons of coconut oil
  • 2 tablespoons of maple syrup
  • 1 teaspoon of cinnamon
  • 1 tablespoon of stevia
  • 4 tablespoons of water

Directions:

In a medium pot add the coconut oil and let it melt on a medium heat.

Once melted add the maple syrup, cinnamon and 4 tablespoons of water. The little bit of water ensures the maple syrup doesn’t stick to the bottom of the pot.

Add the popcorn kernels to the pot then close with the lid. After a few minutes you will begin to hear the kernels popping.

Let them pop until they stop!

Once all the kernels have popped add to a large bowl and sprinkle the stevia on top. Then serve!

Great for a snack while sitting down and enjoying a movie at the weekend!!
