Chocolate and Peanut Butter Power Balls

Simply Nutritious Peanut Butter and chocolate ballsAnother super easy snack to prepare. These are called power balls because they are nutritionally powerful. The oats contain fibre, protein, thiamin, the flaxseed is a great source of healthy fats, also fibre and the psyllium husks I added to promote my digestive system health. Psyllium husks are known as a form of laxative and can help regulate digestive health. However it is not necessary to add these in this recipe so feel to exclude if you desire. Again I made a double batch, one for this week and the other batch in the freezer for next week.

Dietary Preferences: Vegetarian (for gluten- free option use gluten-free oats)

Ingredients:

  • 3 cups of oats
  • 5 tablespoons of flaxseed
  • 5 tablespoons of psyllium husk powder
  • 1 cup of pure peanut butter
  • 2 1/2 tablespoons of raw cacao
  • 1 1/2 cups of unsweetened almond milk
  • 1 cup of medjool dates (soaked in a cup of water)
  • 1/2 cup of chopped walnuts
  • 1/2 cup of dessicated coconut

Directions:

In a pan heat the peanut butter and almond milk, mix until both are combined. Soak the dates in a cup of boiling water for a few minutes. In a mixing bowl, add the oats, flaxseed, psyllium husk, cacao and chopped walnuts.

Once the dates have soaked for a few minutes, add to a food processor with half of the water and blend for 1 minute.

Then add the peanut butter and almond milk to the dry mixture along with the dates, give everything a good mix around.

The mixture should now be wet but not too wet. Enough to be able to form balls, just like the picture below.

Now the fun part, rolling the mixture into bite sized balls. I got 22 balls out of this mixture but that depends on the size of your portions.

Once you have prepared all the balls, now roll each of them in coconut.

So easy to prepare these power balls, get creative with them adding any ingredients you like for example dried fruit or various types of nuts. A nutritious and healthy snack that you can pop into your handbag wherever you go!
