Oat and Date Bites

Simply Nutritious Oat and Date Bites These are a perfect snack for work or for when you need a quick something to keep your hunger at bay until dinner time. These little beauties are served raw so no need for cooking which means they can be prepared in even less time. I make a big batch, normally around 20 then freeze half for the following week.

leavesServes: Makes 20 (Just half ingredients to make smaller batch)

Dietary Preferences: Vegan and Vegetarian (For Gluten-Free option use Gluten-Free oats)

Ingredients:

  • 2 cups of medjool dates
  • 3 cups of oats
  • 1 tablespoon of cinnamon
  • 2 cups of mixed nuts (I used hazelnuts, walnuts and cashews)
  • 3/4 cup of raisins
  • 1 cup of flaxseed
  • 1/2 cup of water

Directions:

Ensure dates are unpitted, then soak in a bowl of boiling water for 10 minutes. In a food processor blend the oats until they are flour like, add to a big bowl. Also then put the mixed nuts in the food processor and blend until you have smaller chunks. Add the nuts to the bowl with the oat mixture, along with the raisins and cinnamon.

Give everything a good stir around. Now you can add the dates to the food processor along with half a cup of water and blend until you have a smooth texture.

Simply Nutritious Oat and date bitesCombine the date mixture to the dry mixture and mix everything around so the oats are coated in the dates. If the mixture is still a little dry add a drop more of water.

Simply Nutritious Oat and Date BitesThey should look something like the above when your done, it’s up to you how big or small you do them but I wouldn’t go too big.

As I said I pack half away into an airtight container and pop into the freezer for the following week.
